Fresh Black Perigord Winter TrufflesWith pigs and dogs chomping at the bit, the French truffle season opens the last week of November. The Black Perigord Winter Truffle (tuber melanosporum), the delicacy highly prized by fine chefs and connoisseurs, has a rich aroma and flavor that cannot be matched. It is known as the Black Diamond of cookery. Perigord truffles add an incomparable richness to hearty stews, red wine sauces, aged cheeses, and soups. Used raw, in thin slivers or shavings, the intense flavor transforms simple scrambled eggs, baked potatoes, pasta, or risotto. Truffle stuffing for your holiday turkey creates an unforgettable dish.

Truffles are rare and found 4 to 5 inches underground, usually near oak trees. Traditionally, pigs have the best “noses” for locating truffles, but love them and will eat them on the spot if they can. Dogs can be trained to find truffles, but have no interest in eating them. It’s easier to cart around a dog in the back of your Deux Chevaux, but you may be missing a few precious Black Diamonds without a pig. 1 oz. Whole truffles $180 Truffles will be available again as of December 2, 2009 |
